Cheesecake Cookie Fruit Cups

Since today is Mother's Day, I wanted to make a special dessert for mom for her Mother's Day dinner. These delicious Cheesecake Cookie Fruit Cups are amazing! And so easy to make! They are perfect for any occasion! 
The cookie cups are made with Pilsbury Sugar Cookie Dough, easy right?! The cheesecake filling is just cream cheese, sugar, vanilla and cool whip. Top these beauties with fresh fruit or berries and you're done! 
I added juice from half a lime to a cup of the cheesecake filling to make a lime cookie cup. It's so refreshing and so yummy! 
My family loves how creamy the cheesecake filling is. And my kids loved helping put the fruit on top of these. They not only taste good, but they turn out so pretty! Give them a try, you'll be hooked! And since they have fruit on them, it makes them healthy, right?! Happy Mother's Day! 
Cheesecake Cookie Fruit Cups 
•1 pkg. Pilsbury Sugar Cookie Dough
•8 oz. Cream Cheese
•1/2 cup Sugar 
•1 tsp. Vanilla 
•1 container Cool Whip
•Fresh Fruit, Diced 
Cookie Cups:
Roll Sugar Cookie Dough into 2 inch size balls and place in greased, regular sized cupcake tins. Bake at 350 degrees for 10-12 minutes. Remove and let cool completely.
Cheesecake Filling: 
Combine Cream Cheese, Sugar and Vanilla with a mixer until fluffy. Fold in Cool Whip. Fill Cookie Cups. 
Top with fresh fruit and serve! One roll of Cookie Dough Makes 12 Cookie Cups.
