Ham and Egg Breakfast Cups
• 6 Eggs, beaten
•1 tsp. Milk
•1/2 cup bell pepper diced
•1 cup spinach
•1/2 cup shredded cheese
•Pinch of salt, pepper and garlic powder
•12 round slices of ham (or favorite meat)
•Avocado and Salsa for topping
Directions: Mix the eggs, milk, peppers, spinach, cheese and spices together in a bowl. Line a greased cupcake tin with the slices of ham. Push the center of the ham down in the pan to make a cup. Spoon the egg mixture into the ham cups until full. Bake at 375 for 10-12 minutes or until egg is set and cheese is bubbly. Top with avocado and salsa. Enjoy!
