Ham and Egg Breakfast Cups

If you're looking for a healthy and quick breakfast idea, this recipe is for you! These Ham and Egg Breakfast Cups are so good and so easy to make! You can also add any vegetable you like to these yummy cups. 
Make sure you grease your cupcake pans or these beauties will stick and you'll never get them out. You can use any kind of ham or Canadian bacon, I just used the round organic ham slices from Costco. 
You can make a bunch of these ahead of time and store them in your fridge for a fast breakfast in the morning. Plus, they're a healthy option. I like mine topped with avocado and salsa. You're whole family will love these! 

Ham and Egg Breakfast Cups

• 6 Eggs, beaten  
•1 tsp. Milk 
•1/2 cup bell pepper diced 
•1 cup spinach 
•1/2 cup shredded cheese
•Pinch of salt, pepper and garlic powder
•12 round slices of ham (or favorite meat)
•Avocado and Salsa for topping  

Directions: Mix the eggs, milk, peppers, spinach, cheese and spices together in a bowl. Line a greased cupcake tin with the slices of ham. Push the center of the ham down in the pan to make a cup. Spoon the egg mixture into the ham cups until full. Bake at 375 for 10-12 minutes or until egg is set and cheese is bubbly. Top with avocado and salsa. Enjoy!
