Mini Zucchini Pizzas

One of the things I love most about summer time is fresh vegetables from our garden! My family loves these Mini Zucchini Pizzas and you will love how simple they are to make! They are also so healthy for you compared to regular pizza! You will love this recipe! 
You'll want to make sure you pick out a large zucchini for these pizzas so you have room for the toppings. I let our zucchini grow a couple extra days and they work perfectly! 
Cut the zucchini into 1/4 inch round slices. Lay on a baking sheet and sprinkle with salt and pepper. You want to cook them for 5-10 minutes at 375 degrees before you add the toppings. 
Remove from the oven and add tomatoe sauce, cheese and toppings of your choice! We love to top our pizzas with mozzarella cheese, grated Parmesan, Canadian bacon, peppers, olives, basil, Italian seasoning and spinach. Finish baking for 10 minutes or until cheese is melted and zucchini is fork tender. Your family will love this healthy pizza for dinner! 
Zucchini Pizzas
Ingredients: 
•Large Zucchini 
•Small can of tomatoe sauce
•Shredded mozzarella cheese
•Grated Parmesan cheese
•Toppings, such as olives, peppers, meat 
•salt, pepper and Italian seasoning.
Directions: 
Preheat oven to 375 degrees. Slice zucchini into 1/4 inch rounds. Lay on baking sheet. Season with salt and pepper. Bake for 5 minutes. Top zucchini with tomato sauce, cheese and toppings. Sprinkle with Italian seasoning. Finish baking for 10 minutes or until cheese is melted and zucchini is fork tender. Enjoy!
